Apple Cake

Dhahran Theatre Group Cookbook, 1993

Ingredients:

12 oz self-raising flour
8 oz butter
6 oz sugar
4 oz sultanas
1 lb cooking apples (preferably Bramley’s)
3 eggs
pinch of salt

Directions:

Grease and flour an 9-inch round, deep cake tin. Sift flour and salt and rub butter in. Stir in sugar and sultanas. Peel, core and dice the apples, and stir into the mixture. Lightly beat eggs, and stir into the mixture. Do not beat. No other liquid is required. Turn into tin and bake in the centre of the oven at 360˚F (Mark 4) for approximately 11/2 hours. Dredge with caster sugar whilst still hot.
