Coffee Chiffon Pie

Favorite Recipes, Abqaiq, Saudi Arabia, 1953

1 cup fine graham cracker crumbs
3 tbsp. melted butter
¼ cup ground walnuts
1 tbsp. gelatine
1 tbsp. cold water
1 cup STRONG hot coffee
2 tbsp. sugar
½ tsp. vanilla
1 cup heavy cream, whipped

Combine crumbs, butter and walnuts. Mix well. Pat firmly over sides and bottom of 9 inch pie pan. Chill. Soak gelatine in water for 5 minutes. Dissolve in hot coffee, add sugar and stir until sugar dissolves. Chill until syrupy. Add vanilla to whipped cream, blend with gelatine and beat well. Fill pie crust and chill until firm.
