Beef Tenderloin Curry

2 pounds beef tenderloin, cubed
2 teaspoons hot pepper powder
1 teaspoon turmeric powder
1 teaspoon cumin seed powder
1 teaspoon allspice powder
Salt to taste
Pepper to taste
Vinegar
2 onions, chopped
6 flakes garlic
Small piece of fresh ginger
Shortening
6 large tomatoes, chopped
Coridander, finely chopped

  1. Marinate meat with spice powders, salt, pepper and vinegar.
  2. Sauté onions, garlic and ginger in shortening.
  3. When tender, add tomatoes and cook for a few minutes.
  4. Sir in the marinated meat mixture and add water according to consistency of gravy required. Let simmer until tender, stirring occasionally. Garnish with finely chopped fresh coriander.

Yield: Serves 8
