Scratch Cottage Cheese

Favorite Recipes, Abqaiq, Saudi Arabia, 1953

2 qts. warm water
1 1/2 cups powdered milk
6-8 tbsp. *culture

Early in the day make milk and stir in culture. Set over pilot light on stove and keep vessel covered. Stir occasionally during the day. Put bowl in refrigerator at night, still covered. Next morning, put mixture which is thick by now, over direct medium heat until it separates. Pour into cheesecloth and hang over sink to drip until cheese is thickness you desire. Cream may be added if you wish.

*Culture may be obtained from many housewives who have been cooking in Arabia for some time.
