Commissary Highlights 1978 - 1985

½ cup shortening
1 cup packed light brown sugar
½ cup granulated sugar
1 teaspoon vanilla
2 cups whole-wheat flour
1 cup enriched white flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup milk

First, cream the shortening with the sugars and vanilla.  Then sift the dry ingredients and add them alternately with the milk, mixing well each item. Chill about twenty minutes in the freezer.

Now the going gets mathematical: Divide it in 4 parts and roll each part 1/8 inch thick.  Trim each into a long rectangle, 5 inches by 15 inches.  Cut this into 6 smaller rectangles, 2 ½ inches by 5 inches.  And there’s your classic double graham cracker, lacking only a line down the middle.  So make one with a table knife, indenting lightly, and add some dimples with a fork.  This is important.  No dimples, and they don’t look official.  Then, with a spatula, put them carefully on a couple of greased cooky sheets and bake in a 350 degree oven for ten to twelve minutes, till the edges are brown.

Yield: 48 single graham crackers

Store: In a tin box in the refrigerator.
