Recipes from Jeddah, Saudi Arabia, 1966 - 1972

3 eggs
3 oz. melted butter
8 oz. sugar
2 lemons

Whisk together in a microwave safe bowl, eggs, melted butter, sugar and the rind and juice of 2 lemons.

Microwave on high for 5 minutes, stopping to stir mixture every minute.  Mixture is ready when it coats the back of a spoon.

This is so much better than anything you can buy in a jar!  It can be eaten by the spoonfuls, spread on toast, used between cake layers, or added as a dessert filling.
