Dessert - Cheery Cheese (Abqaiq - 182)
Pastry for 2 crust 9 inch pie
9 ounce cream cheese, softened
1/2 cup sugar
1/3 cup chopped walnuts
1 teaspoon vanilla
2 cans (1 pound 5 ounces) cherry pie filling
On a lightly floured surface, roll pastry into a 14 inch circle; place in a 12 inch pizza pan. Flute edges, prick crust. Bake at 350 degrees for 15 minutes.
Blend cream cheese and sugar, add the eggs and beat well. Add nuts and vanilla. Pour into partially baked crust. Bake an additional 10 minutes.
Cool. Spread cherry pie filling over cheese layer. Chill. Top chilled pie with dollops of whipped cream. To serve, cut in wedges.
Yield: Serves 10 - 12
