Dhahran Theatre Group Cookbook, 1993


2 Cups flour
1/3 Cup sugar
1 Tablespoon baking powder
1 Egg
3/4 Cup milk
1/3 Cup oil
1 Teaspoon grated lemon peel
1 package (8 oz.) cream cheese, cut into 1/2 inch cubes
1 Can (16 oz.) blueberries, drained
1 Teaspoon lemon juice
3 Tablespoons sugar


Heat oven to 400?F. Mix flour, sugar and baking powder in bowl.

Beat egg. Add milk, oil and lemon peel. Add to flour mixture. Mix until moistened. Fold in cream cheese and blueberries.

Spoon into greased muffin pan. Bake 20 minutes or until slightly brown. Mix lemon juice and sugar. Brush on muffins.
